Stuffed Sweet Potato
Inspired by the Turkish recipe 'kumpir', this healthy dish features a baked sweet potato filled with a spicy sauce of roasted peppers, sautéed chickpeas, and feta. Served with a refreshing cucumber raita. A true explosion of flavours!
Pepper, white onion, cucumber, garlic, sweet potato, lemon, fresh chives, mint, parsley, kalamata olives, chickpeas, corn, chili powder, smoked paprika, cumin seeds, coriander seeds, oregano, za'atar (sesame, oregano, mint, sumac, turmeric, salt), feta made from pasteurised sheep and goat milk, yoghurt, gluten-free soy sauce, tomato paste, baking soda, pepper and salt, sunflower oil.
Allergens: koemelk, lactose, sesamzaad, soja, sulfiet.
Microwave
Heat the stuffed sweet potato loosely covered for 3-4 minutes (1 person) to 5-8 minutes (2 or more persons). Serve with the cucumber raita (cold).

Preheat the stuffed sweet potato covered with aluminium foil or an oven-safe dish for 20 minutes (1 person) to 25-30 minutes (2 or more persons). Serve with the cucumber raita (cold). Disposable containers cannot be used in the oven, transfer to an oven dish.
