Quiche with Goat Cheese and Spinach
This savoury quiche with goat cheese is packed full of healthy spinach. The secret ingredient here is watercress, which adds a bit of a kick to the tart. Accompanying it is a salad with spelt, sautéed mushrooms, marinated courgette, and roasted pumpkin.
Courgette, mushrooms, yellow beetroot, cherry tomatoes, white onion, watercress, garlic, fresh mint, thyme, confit lemon, nutmeg, Parmesan cheese, soft goat cheese, pasteurised free-range egg, cream, spelt, puff pastry, sugar, white wine vinegar, pepper and salt, sunflower oil.

Microwave
Heat the quiche loosely covered for 3-4 minutes (1 person) to 5-8 minutes (2 or more persons). Serve with the spelt salad (cold).

Preheat the quiche covered with an oven-safe plate or aluminium foil for 15-20 minutes (1 person) to 25-30 minutes (2 or more persons). For the last 5 minutes, uncover it. Serve with the spelt salad (cold). Disposable containers cannot go in the oven, transfer to an oven dish.
