Courgette Fritters
These courgette fritters are a true delight and also healthy! I make them from grated courgette, almond flour, free-range egg, and for flavour, I use some Parmesan cheese and fresh herbs. I bake them to a golden brown in the oven. Delicious with oven-roasted potatoes and a crunchy carrot salad.
Courgette Fritters
Courgette, cherry tomato, cucumber, carrot, red bell pepper, spring onion, potato, lemon, fresh dill, mint, parsley, almond flour, mature cheese, pasteurised free-range egg, extra virgin olive oil, pepper and salt, sunflower oil.
Allergens: ei, koemelk, lactose, noten.
Microwave
Remove the courgette fritters with baking paper from the dish. Heat the potatoes loosely covered for 2 minutes (1 person) to 3-4 minutes (2 or more persons). Heat the fritters on the baking paper for the last 30 seconds to 1 minute. Serve with the salad (cold).

Remove the courgette fritters with baking paper from the dish. Heat the potatoes covered with aluminium foil or an oven-safe plate for 10 minutes (1 person) to 15-20 minutes (2 or more persons). Heat the fritters on the baking paper for the last 3-5 minutes. Serve with the salad (cold). Disposable containers cannot go in the oven, transfer to an oven dish.
