Asparagus Croquettes with Spring Mash
Classic flavours perfect for this time of year: golden asparagus croquettes, creamy on the inside and crispy on the outside, served with a mash of seasonal green vegetables and white beans. Accompanied by a refreshing tarragon sauce that pairs beautifully with the croquettes and the mash.
White asparagus croquette (white asparagus, potato, wheat flour, free-range egg, milk, cream, parsley, yeast, sugar), peas, green cabbage, flat beans, green beans, spinach, potato, fresh basil, chives, marjoram, tarragon and parsley, white beans, milk, butter, wheat flour, Dijon mustard, organic vegetable stock, extra virgin olive oil, homemade mayonnaise (sunflower oil, pasteurised free-range egg yolk, Dijon mustard, white wine vinegar, salt), pepper and salt.
Allergens: ei, gluten, koemelk, lactose, mosterd, sulfiet.
Microwave
Remove the croquettes from the tray and heat the mash loosely covered for 3-4 minutes (1 person) to 5-8 minutes (2 or more persons). Heat the croquettes on the baking paper for 1 minute (they will not be crispy). Serve with the tarragon sauce (cold).

Remove the croquettes from the tray and heat the mash covered with an oven-safe plate or aluminium foil for 15-20 minutes (1 person) to 25-30 minutes (2 or more persons). In the last 12 minutes, heat the croquettes on the baking paper alongside. Serve with the tarragon sauce (cold). Disposable containers cannot go in the oven; transfer to an oven dish.
