Katsu Curry with Chicken
The Japanese cuisine is heavily influenced by India, and this dish reflects that beautifully. The katsu curry is rich in flavour thanks to the combination of Indian spices with quintessential Japanese ingredients such as miso, mirin, and soy sauce. The curry is packed with vegetables, including edamame beans, sweet potato, and carrot. We first coat the chicken breast (better living 2 stars) in breadcrumbs and then fry it in vegetable oil until golden brown. It is served with seasoned wholegrain Japanese rice, enriched with sesame seeds, spring onions, and peanuts.
Chicken schnitzel (chicken breast - better living 2 stars, pasteurised free-range egg, breadcrumbs, panko, salt, Szechuan pepper), sweet potato, potato, edamame beans (young soybeans), spring onion, fresh ginger, garlic, apple, white onion, carrot, red pepper, brown rice, basmati rice, peanuts, black and white sesame seeds, miso (soybean paste), gluten-free soy sauce, sesame oil, rice vinegar, mirin (Japanese cooking wine made from fermented glutinous rice), homemade garam masala (coriander seeds, cumin seeds, green cardamom, black pepper, cinnamon, fennel seeds, bay leaf, cloves), Szechuan pepper, homemade colombo masala (contains fenugreek, mustard seeds, and turmeric), chicken stock (contains celery), sunflower oil, pepper and salt.
Allergens: ei, gluten, mosterd, pinda, selderij, sesamzaad, soja.
Microwave
Remove the chicken from the dish. Heat the rice and curry loosely covered for 3 minutes (1 person) to 7 minutes (2 or more persons). Heat the chicken uncovered on the baking paper for 1-2 minutes. Note: the chicken will not become crispy in the microwave.
Oven — 200°C, 15-30 minMarleen's choice
Remove the chicken with baking paper from the dish. Heat the rice and curry covered with aluminium foil or an oven-safe plate for 10 minutes (1 person) to 20 minutes (2 or more persons). Place the chicken on the baking paper alongside and heat everything for another 10 minutes. Disposable containers cannot be used in the oven; transfer to an oven dish.
