Italian Meal Salad
Insalata di Riso is a classic of the Italian spring/summer. This salad of cold cooked rice has as many variations as there are families. My version is packed with crunchy vegetables (we make our own giardiniera salad specifically for this dish) and plenty of Italian flavours such as olives, capers, and oregano. Ham, white cheese, and a soft-boiled egg complete the dish. Buon appetito!
