A healthy evening meal featuring this Indian curry salad with roasted cauliflower and fennel, enhanced with spicy apple chutney. The baby potatoes are prepared with coconut milk, mustard seeds, and tamarind, accompanied by roasted cashew nuts. The chicken thigh fillet (better living 2 stars) is marinated overnight and then roasted to a golden brown in the oven.
