
Greek Spetzofai
This deceptively simple Greek dish is true comfort food. I stew the vegetables with oregano and paprika until they are soft and sweet. At the end, I add steamed potatoes that absorb the flavours of the stewed vegetable sauce. Served alongside are roasted chicken chipolatas.
Chicken chipolata sausages, green bell pepper, red bell pepper, red onion, runner beans, tomatoes, garlic, potato, fresh parsley, chilli flakes, oregano, paprika powder, tomato purée, Pernod, extra virgin olive oil, sunflower oil.

Heat the spetzofai loosely covered for 3-4 minutes (1 person) to 5-8 minutes (2 or more persons).
Oven — 200°C, 15-30 min
Preheat the spetzofai covered with an ovenproof dish or aluminium foil for 15-20 minutes (1 person) to 25-30 minutes (2 or more persons). Disposable containers cannot be used in the oven, transfer to an oven dish.
