Crispy Schnitzel with Spicy Lentil Stew
Crispy, golden-brown fried schnitzel is served with a hearty lentil stew that I flavour with warming Chinese spices. Accompanied by a mix of steamed basmati and brown rice, and tender steamed broccoli. The dish looks slightly different from the photo.
Chicken schnitzel (chicken breast - better life 2 stars, breadcrumbs - gluten), broccoli, red and yellow bell pepper, white onion, spring onion, red chilli, garlic, fresh ginger, coriander, red lentils, Chinese 5 spices (coriander, cinnamon, cardamom, allspice, mustard flour, anise, bay leaf), coriander seeds, turmeric, thyme, pasteurised free-range egg, basmati rice, brown rice, breadcrumbs, panko (contains gluten), white miso (soybean paste), mirin (Japanese rice wine, alcohol cooked off), sunflower oil.

Heat the lentil stew with schnitzel loosely covered for 3-4 minutes (1 person) to 5-8 minutes (2 or more persons). Note, the schnitzel will not be crispy in the microwave.
Oven — 200°C, 15-30 min
Preheat the lentil stew with schnitzel covered with an oven-safe plate or aluminium foil for 15-20 minutes (1 person) to 25-30 minutes (2 or more persons). Disposable containers cannot go in the oven, transfer to an oven dish.
