Chipotle Meatballs
Authentic Mexican flavours with these savoury and mildly spicy meatballs featuring chipotle peppers. We bake these meatballs in the oven until golden brown. Accompanying them is a 'pico de gallo', a salsa made from tomato, sweet caramelised onion, mango, and lime. Served with a spicy bean and quinoa salad, which is enjoyed warm. Enjoy your meal!
Beef mince (better life 2 stars), red onion, white onion, cucumber, red bell pepper, vine tomatoes, jalapeño peppers, garlic, lime juice, mango, orange zest, fresh coriander, kidney beans, corn, smoked paprika, cinnamon, cumin seeds, sea salt, tortilla chips (made from corn flour), red cheddar, pasteurised free-range egg, white quinoa, panko (contains gluten), chipotle peppers in adobo sauce (contains soy), Dijon mustard, tomato ketchup, orange juice, cocoa powder, icing sugar, sugar, red wine vinegar, pepper and salt, sunflower oil.

Microwave
Heat the beans and meatball loosely covered for 3-4 minutes (1 person) to 5-8 minutes (2 or more persons). Serve with the pico de gallo. Prefer the beans cold? Heat only the meatball.
