Salmon fish cakes
Fish cakes are not only a treat to eat, but also definitely fun to make! And a very good reason to eat fish more often. I make them from fresh salmon fillet and smoked salmon, baking them at a high temperature in the oven. This gives them a crispy crust and they are not greasy. Delicious with a salad or in a bun as a salmon burger!
Ingredients for 4 people: 500 grams of potatoes 300 grams of skinless salmon fillet 125 grams of smoked salmon flakes 1 bunch of parsley 1 clove of garlic 1 small onion 2 anchovy fillets from a tin or jar 1 lemon 3 eggs 1 heaped tablespoon of capers Black pepper from the grinder
Preparation:
Peel and cook the potatoes until tender. Drain, mash roughly and let cool. Preheat the oven to 240 degrees. Meanwhile, cut the salmon fillet into small thin strips. Finely chop the bunch of parsley, peel the garlic and onion and chop finely. Chop the anchovies. Beat the eggs in a bowl and grate ⅓ of the lemon zest. Now mix all the ingredients together, along with some black pepper from the grinder, knead it together so it becomes a firm mixture. Form burgers from this (8 large or 16 small about 1 cm thick) and place on a baking tray lined with baking paper. Bake the burgers for 8 to 10 minutes. Delicious in a hamburger bun, pita bread, wrap or Lebanese flatbread. With a fresh salad and mayonnaise/yogurt sauce with finely chopped chives, finely chopped capers, black pepper and lemon zest, your meal is completely ready.
