Vegan meatballs (and a healthy chickpea snack)
Pulled oats are all-natural, made from oats, broad beans, and peas. This makes it environmentally friendly and contains all the necessary amino acids (proteins). The texture is firm, making it ideal for cooking, such as for these meatballs. I don't use egg, but aquafaba, the liquid from canned chickpeas. This way, I keep the balls 100% plant-based. And the leftover chickpeas? You can make a tasty snack from them :)
Back to the meatballs: these are perfect with spaghetti and tomato sauce, with roasted potatoes and your favourite vegetables, or as a snack while watching TV with a spicy dip!
Serves 4 Ingredients: 1 half onion, 25 ml white wine, 350 grams pulled oats (available at AH and Plus supermarkets), 50 ml or more aquafaba (liquid from a 200-gram can, keep chickpeas separate), 3 or more tablespoons breadcrumbs or panko, 2 teaspoons mixed herbs, 2 teaspoons fine mustard, 1 small tablespoon ketchup, 1 small tablespoon ketjap manis, optionally salt and black pepper, vegetable oil
Preparation: Peel the half onion, finely chop it, and sauté it in a pan with a little oil. Add the white wine and let it simmer for at least 15-20 minutes, until the wine has evaporated and the onion is nice and soft. Meanwhile, chop the pulled oats a bit finer and mix with all the other ingredients. Start with 50 ml aquafaba and 3 tablespoons breadcrumbs or panko. Add the onion and see if you can form balls from the mixture. If it's too wet, add a bit of panko/breadcrumbs, and if it's too dry, add a small amount of aquafaba. Before you start making the balls, taste the mixture first. If necessary, add a bit of salt, or if you prefer it spicier, sourer, or sweeter, add a small amount of black pepper, mustard, ketchup, or ketjap. Then form balls, you should make about 10-12 balls if they are the size of a ping pong ball. Bake them in a preheated oven on an oiled baking tray for 10 minutes at 220 degrees.
And now a simple snack recipe for the chickpeas: Preheat the oven to 200 degrees. Rinse the chickpeas and pat them dry. Mix them with a combination of dry spices, you will need about 2 teaspoons in total. For example, a mix of 2 or more of these spices: paprika powder, curry powder, cumin powder, coriander powder, garlic powder, or chili powder (a small pinch of that is enough!). Add a pinch of salt and spread the seasoned chickpeas out on a baking tray lined with baking paper. Roast them for 15 minutes, toss them around (as much as you can, they roll everywhere!), and roast them for another 5 to 10 minutes. Let them cool a bit and your super healthy snack is ready!
