Heavily filled vegan bean chili
Packed with flavour, super healthy and with a warm twist from the cocoa, this heavily filled vegan bean chili is delicious with tortillas, cucumber and guacamole, or with whole grain rice, pieces of avocado and a fresh sweet-sour.
Ingredients for 4 people: 2 red or yellow bell peppers, 1 medium onion, 3 cloves of garlic, 1 heaped teaspoon cumin powder, 1 heaped teaspoon coriander powder, 1 teaspoon dried oregano, a pinch of smoked paprika (pimenton de la vera, available at Jumbo or AH), a pinch of cinnamon powder, a pinch of chili powder, a pinch of clove powder, 1 tin of tomato puree, 70 grams, half a red chili, optionally a quarter of a madame jeanette chili, 1 dried bay leaf, 1 tin of chopped tomatoes, 400 grams, 1 teaspoon cocoa powder, 600 grams drained canned beans, e.g. a mix of black beans, brown beans, kidney beans, 1 bunch of coriander, vegetable oil, freshly ground black pepper, salt.
Preparation:
Clean the bell peppers and cut them into thin strips or cubes of 1.5 by 1.5 cm. Peel and chop the onion and garlic finely. Sauté the bell peppers with the onion and garlic in a large pan with a small splash of oil. Cook over medium heat for 20-25 minutes, until the onion and bell peppers are fairly soft, then add the cumin powder, smoked paprika, oregano, cinnamon powder, clove powder, coriander powder, chili powder and bay leaf and sauté briefly. Meanwhile, finely chop the chili(es) and add this along with the tin of tomato puree. Sauté briefly. Then add the chopped tomatoes, along with half a teaspoon of salt, and simmer everything gently for 15 minutes. Prepare the beans and chop the coriander finely. Finally, add the beans and heat through well. Then add the cocoa powder along with the chopped coriander. Taste and add more salt, freshly ground black pepper, chili powder or fresh chili as you like! Serve with tortillas (5 min. in a preheated oven at 200 degrees), guacamole (I find the fresh guacamole from AH a great alternative if you don't have time to make it yourself or pieces of fresh avocado) and pieces of cucumber. Or serve with (brown) rice and if you have a jar of atjar, that goes very well with this too :)
