Vegan 3-course menu on 1 November
Since the start of MarleenKookt, nearly 7 years ago, you can choose every day between a meat or fish dish and a vegetarian meal. I enjoy cooking vegetarian and find it a fun challenge to develop vegetarian recipes where you not only leave out or replace the meat or fish component, but where the dish is a standalone, complete meal.
Vegan cooking
More and more often I receive requests from customers to add a vegan option to my menu. Initially, I saw this as something complicated, but now that I have delved deeper into it, I find it increasingly enjoyable! Vegan cooking challenges me to look at recipes, dishes, and preparation methods in different ways, and it is stimulating to step outside our usual paths. While searching for recipes, I also discovered that I already cook vegan more often than I thought!
Vegan dishes I have cooked recently include Surinamese roti, Thai vegetable curry, Poké Bowl, and Sukiyaki tofu.
Challenge
The next challenge was to see if I could broaden it and cook a vegan soup and dessert. I often make my desserts with dairy products and sometimes with gelatine. We have been experimenting a lot in the kitchen lately. From vegan mayonnaise (like the one in the photo) to vegan tarte tatin. On 1 November, it is World Vegan Day and you can order my vegan 3-course menu featuring an Arabic lentil soup, veggie tagine, and tarte tatin.
