Onion marmalade with red wine
This onion marmalade is super easy to make and delicious with a cheese board in the evening while watching TV, on a sandwich for lunch, or with a mashed potato dish. You can vary the flavour by replacing part of the red wine with balsamic vinegar while cooking (it will become a bit sweeter and 'sticky') or by adding a sprig of rosemary or thyme to cook with it. Remove these at the end. In a clean jar, this onion marmalade will keep for at least 7 days in the fridge.
Ingredients For about 300 grams, this just fits in a jam jar: 350 grams of red or white onion, or shallot, peeled and sliced into thin half-rings 30 grams of sugar, or jam sugar 30 ml of red wine vinegar 150 ml of red wine.
Preparation Put everything in a pan and bring to the boil. Let it simmer gently until the onion is completely soft and the consistency resembles a kind of thick jam. This takes at least 45 minutes to an hour. Season with a small pinch of salt and, if you like, some coarsely ground black pepper. Let it cool and transfer to the clean jam jar and store in the fridge.
