Indian onion bhaji
I love Indian street food, like this fritter made from onions, spices, and chickpea flour. Delicious as a snack, dipped in chutney, but also perfect for dressing up your Indian meal.
Your house will smell quite strong, so open the kitchen door or turn the extractor fan to high ;)
This recipe is gluten-free and 100% plant-based.
Ingredients for 8-10 bhajis:
1 teaspoon cumin seeds
1 teaspoon yellow or black mustard seeds
1 teaspoon coriander seeds
700 grams onions
1.5 teaspoons salt
80 grams chickpea flour
35 grams rice flour
1.5 teaspoons baking powder
100 ml water
Juice of half a lemon
Half a teaspoon garam masala
Pinch of turmeric
Pinch of chili powder
Vegetable oil for frying and deep fryer
Preparation:
Peel the onions and slice them into thin rings. Mix the onions with the salt and let them sit for an hour.
Toast the cumin seeds, mustard seeds, and coriander seeds in a dry pan over medium heat for a few minutes until they become fragrant, then set aside.
Mix all the ingredients except the onions into a batter and then add the onions and mix well.
Heat the oil to 175 degrees and form a sort of ball from the onion batter, about the size of a large tomato. Carefully slide this ball into the fat and repeat until there are several balls in the oil. Turn them over when the bottom is nicely coloured, which takes a few minutes. Fry the other side for a few minutes as well, until nicely coloured. Repeat until the batter is finished.
Let the bhajis drain on a piece of kitchen paper and serve immediately.
