Thousand Island Dressing
A perfect dressing for summer fruit salads, or with meal salads featuring smoked tofu, smoked fish or smoked chicken. It’s a bit of work, but it’s worth it! Store in a clean jar or bottle and you can keep this dressing in the fridge for at least 7 days.
Ingredients for over 500 ml of dressing:
2 fresh eggs
1 lemon, juiced
2 teaspoons paprika powder
320 ml vegetable oil (no olive oil)
Pinch of salt
2 tablespoons liquid honey
1 orange, juiced
2 tablespoons ketchup
1 tablespoon Worcestershire sauce (can be replaced with soy sauce for a vegetarian dressing)
Tabasco to taste
Electric hand mixer
Preparation:
Separate the eggs and place the yolks in a bowl. Add the lemon juice and paprika powder. Now, while you turn on the hand mixer, very slowly add the oil in a thin stream. This way, the yolk will thicken and you will get a thick dressing. Once all the oil is incorporated, turn off the mixer. Then add the remaining ingredients and mix well. Add Tabasco to taste.
