Sinterklaas taaitaai
Sinterklaas is in the country, so it's time for taaitaai! It's fun to make together with your children on a dreary day, and your house will smell amazing ;)
Ingredients for about 40-50 pieces: 125 grams honey 125 grams syrup 2 tablespoons water 125 grams plain flour 125 grams rye flour (available at AH from the brand SMAAK or at Ekoplaza from Luna e Terra) 2 teaspoons baking soda (sodium bicarbonate, available at the pharmacy) 1 heaped teaspoon ground aniseed 1 teaspoon ground cinnamon half a teaspoon ground ginger a pinch of nutmeg 1 egg (can also be omitted, then the taaitaai is 100% plant-based).
Preparation: Heat the honey with the syrup and water in a saucepan, stir, and as soon as it starts to boil, turn off the heat. Let it cool to lukewarm. Sift the rye flour, plain flour, and baking soda into a large bowl and mix together with the dry spices. Add the honey mixture and knead briefly into a firm dough. Separate the egg and beat the yolk in a bowl with a teaspoon of water (not in the mood to separate, or is the yolk breaking? No problem, you can also beat the whole egg). Preheat the oven to 200 degrees and prepare a baking tray lined with baking paper. Clean your countertop and sprinkle with some flour. Divide the dough into 4 pieces and roll them into long sticks with a diameter of 1.5 cm. Brush the tops of the sticks with some beaten egg (yolk), not too much, it shouldn't drip off. Now cut pieces from the stick that are 2 cm wide. You can do this with a knife, a thin spatula, or a pizza cutter. It's also fun with children to roll the dough flat with a rolling pin, brush it with yolk, and then cut out shapes. Just make sure the diameter is also 1.5 cm here, otherwise the taaitaai can become dry in the oven. Place the pieces or shapes with the egg side up on the baking paper. Make sure to place a taaitaai on each corner of the baking paper so that it doesn't blow away during baking. Bake the taaitaai for 7 minutes and let cool outside the oven. The best is to let them sit for a day before you start eating them, but I've never managed that ;) In a sealed container, they will definitely stay good for a week.
