Spinach soup with watercress
This refreshing soup made with spinach is perfect for summer and super healthy! You can enjoy the soup cold or warm. It's great for lunch, as a starter for an elaborate dinner, or straight from the cold thermos into a cup during a picnic ☀️
Ingredients for 1.5 - 1.8 litres:
1 onion
2 cloves of garlic
1 small potato
600 grams of fresh spinach, washed
750 ml water
One and a half vegetable stock cubes
80 grams of watercress or rocket, washed
80 ml cooking cream, double cream, or crème fraîche
Vegetable oil
Salt and pepper
Preparation:
Peel the onion and garlic and chop finely. Sauté in some oil in a large pan for 15 minutes. Peel and dice the potato into small cubes. Add the cubes to the onion and also add the water and stock. Bring to the boil and let simmer until the potato is soft. Then add the spinach and watercress or rocket and turn off the heat. Add the cream and blend the soup until completely smooth with an immersion blender. Season with salt and pepper.
