Spicy apple chutney with cinnamon
This spicy apple chutney is surprisingly delicious and versatile! On a sandwich with cheese, at a drinks party, with Indian dishes, or alongside your meatball with mashed potatoes; this chutney really goes well with everything and elevates your plate to the max :) No more ready-made chutney, rinse out empty jam jars with boiling water and fill them up, so you always have this flavour bomb in your fridge. It keeps for at least 2 weeks when chilled.
Ingredients for 500-600 grams (2 jars of jam): 1 small onion 70 grams light brown sugar 1 tablespoon vegetable oil Piece of ginger (the size of your thumbnail) 2 teaspoons mustard seeds 2 teaspoons fennel seeds 2 teaspoons coriander seeds 1 teaspoon fenugreek seeds 1 teaspoon garam masala Half a cinnamon stick 1 teaspoon cayenne pepper 70 ml white wine vinegar 2 apples (e.g. Jonagold) Half a teaspoon salt Bunch of coriander
Preparation: Finely chop the onion and ensure you have 70 grams left. Sauté them in a pan with the sunflower oil and brown sugar and let caramelise (turn brown). Lower the heat a bit and let it stew for a while. Peel the ginger and grate it finely. Add the ginger along with all the spices and stir briefly, letting it cook gently for 5 minutes so it becomes fragrant. Meanwhile, peel the apples and cut them into 2 by 2 cm cubes. Ensure you have 350 grams left. Deglaze the onions with the vinegar and then add the apple cubes along with the salt. Let it stew gently until the apple is completely soft and everything forms a whole (you can still see the apple cubes). This takes at least half an hour or longer. Then let it cool completely. Finely chop the coriander and mix it with the cooled chutney.
