Valentine's red velvet cake
Treat your Valentine to a delicious red velvet cake! Not only a sight to behold, but also moist, fluffy and fresh at the same time. And as you know, love goes...through the stomach ;-). Enjoy baking!
Ingredients for 12 pieces: 3 teaspoons cocoa powder One and a half teaspoons baking powder 300 grams flour Half a teaspoon salt 225 butter 215 grams white caster sugar 1 packet vanilla sugar 3 eggs 200 ml buttermilk Red food colouring (available at local supermarkets) or red beet powder (online, or at a health food store) For the white filling and topping: 130 grams cream cheese 90 grams butter 100 grams icing sugar A large baking tray, rectangular or round
Method: Preheat the oven to 175 degrees. Mix cocoa powder, baking powder, flour and salt together. Combine the buttermilk with the red food colouring (follow the quantities on the packaging) until you have a deep red liquid. Beat the butter with the sugar until fluffy in a large bowl, then add the eggs one by one, beating for another 5 minutes. Mix baking soda with vinegar. Now add half of the mixed flour and half of the red buttermilk to the butter mixture and mix well. Then stir in the baking soda/vinegar mixture. Add the remaining flour and buttermilk and mix until smooth. Grease the baking tray with a thin layer of vegetable oil or butter and pour in the cake mixture. Place in the centre of the oven and bake for 20-25 minutes, checking with a skewer to see if the cake sticks; if it does, bake a little longer. Then let the cake cool completely. In the meantime, prepare the white layer by beating the butter with cream cheese and icing sugar until smooth. Once the cake is cold, carefully cut it in half to create 2 layers. Spread half of the white mixture on the cut side of one layer. Place the other layer on top and spread again.
