Recipe - create your own Poké Bowl
Poké (pronounced Pokay) Bowl is a traditional Hawaiian dish with fish, rice, and vegetables. Make your own Poké Bowl with your favourite ingredients and leftovers from your fridge. Perfect to enjoy on your balcony on a lovely day!
You start with a carbohydrate-rich ingredient, sushi rice, whole grain rice, quinoa, bulgur, or couscous. Prepare this according to the package instructions.
The second component is a protein-rich ingredient, such as smoked chicken or salmon, fried prawns, hard-boiled egg, pieces of fried tofu, or tempeh. Use 70 grams per person.
The third component is a mix of raw finely chopped vegetables, such as carrot, radish, cucumber (delicious with a bit of rice vinegar), corn, beetroot, and edamame beans. Tip: seaweed salad and/or avocado goes really well with this! Use a total of about 250 grams per person.
For topping, finely chopped spring onion, roasted sesame seeds, grated coconut, or fried onions are tasty.
Finish the bowl with two delicious dips. For 2 people:
Mix 2 tablespoons of mayonnaise and half a teaspoon of wasabi paste or sriracha until smooth.
Mix 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of sesame oil, and 1 teaspoon of grated fresh ginger.
