No bake cheesecake with strawberries
Mother's Day is almost here! How lovely is it to surprise your mother with a homemade cheesecake? Beautifully wrapped with a sweet card, every mum will be delighted :-). Below, I share the recipe for my easy no bake cheesecake with strawberries.
Ingredients: 250 grams of biscuits or speculoos cookies 125 grams of unsalted butter 15 grams of gelatine leaves 2 lemons, preferably organic 100 ml of water 20 grams of granulated sugar 500 ml of quark 250 grams of mascarpone 120 grams of caster sugar 200 grams of fresh strawberries
Preparation: Crumble the biscuits in your food processor. If you don't have a food processor, place the biscuits in a clean tea towel, fold it closed and crush with the bottom of a pan until you have crumbs. Melt the butter in a pan, turn off the heat and mix the butter and crumbs together in the pan. Line a round cake tin with this mixture and press down well (e.g., with the bottom of a glass). Place the cake tin in the fridge. Soak the gelatine leaves in cold water. Wash the lemons and grate the zest, set this aside. Squeeze the lemons and heat with the water and granulated sugar in a small saucepan. Turn off the heat and dissolve the soaked and squeezed gelatine leaves in the hot mixture (do not let it boil), ensuring no pieces of gelatine remain visible! In a large mixing bowl, use an electric hand mixer to combine the quark with the mascarpone and caster sugar, along with the lemon zest. Add the gelatine mixture to this and mix well. Pour the mixture over the base and let it set in the fridge for at least 4 hours. Slice the strawberries and distribute them over the cheesecake.
