Fresh mint chutney
I am a fan of Indian food and this fresh, spicy and vibrant green chutney pairs well with the warm flavours of this colourful cuisine. It not only completes your curry but can also be used to dress up your soup!
Ingredients: 120 grams fresh mint 1 green rawit chilli 35 grams fresh ginger 1 clove of garlic 1 lemon 2 tablespoons desiccated coconut 1 teaspoon sunflower oil Salt
Preparation: Pluck the leaves from the stems. Chop the chilli into pieces. Peel the ginger and slice it. Peel the garlic and chop it into a few pieces. Squeeze the lemon for its juice. Put everything in a blender or food processor and add 3 tablespoons of water and a pinch of salt. Blend the chutney until it is a smooth and creamy mixture. Add a little more water if it remains too thick. Taste and add more lemon juice, salt or black pepper if you want it a bit more sour, salty or spicy. This chutney will keep for at least 5 days in the fridge in a clean jar.
