Mexican lasagne
The lasagne consists of layers of tortillas and a filling of minced beef, bell pepper, tomato and herbs. On the top layer, there is a topping of crème fraîche and cheese that melts beautifully in the oven.

Ingredients 8 tortillas
500 g minced beef 1 large red bell pepper 400 g canned tomatoes
160 g crème fraîche 170 g grated mature cheese
2 spring onions 1 large white onion 2 cloves of garlic
1.5 teaspoons coriander 1 teaspoon ground cumin 1 teaspoon dried oregano 1 teaspoon ground cinnamon 1 teaspoon cocoa powder pinch of chili powder Sunflower oil Preparation 1. Cut the bell pepper into 1 cm by 1 cm cubes and fry in a pan with a little sunflower oil over high heat until lightly coloured. Remove from the pan and set aside. 2. Chop and fry the onion in the same pan with a little sunflower oil until translucent. Add the chopped garlic and sauté for 1 minute. Add the minced beef and the spices, stirring regularly over medium heat until the meat is cooked. Then add the diced tomatoes and the bell pepper, and let the sauce simmer gently for 30 minutes with the lid slightly ajar.
3. Mix 120 g of the grated cheese with the crème fraîche and set aside. Finely chop the spring onions.
4. Remove the sauce from the heat and stir in the chopped spring onions and the remaining cheese. Add a pinch of salt if desired. 5. Line a baking dish with baking paper and place 2 tortillas, trimmed to cover the bottom. Spread ⅓ of the sauce over the tortillas and place another 2 trimmed tortillas on top. Add another ⅓ of the sauce, followed by 2 more tortillas and the final portion of the sauce. Cover the entire dish with the last 2 tortillas and spread the cheese and crème fraîche mixture on top. 6. Place the lasagne in the oven for 20 minutes at 180 degrees, until the lasagne is heated through and the cheese is nicely melted. Enjoy your meal!
