Savoury cooking with chocolate?
When you think of a recipe with chocolate, you probably first think of sweet dishes like brownies, chocolate mousse or hot chocolate.
It's actually a shame because chocolate is a very diverse ingredient that also deserves its place in savoury dishes. Cocoa has a strong cultural value in Mexico and is found in several savoury dishes, including the national sauce "mole". This week you can also find it in my vegetarian fajitas..
The cocoa gives the filling of the fajitas a deep warm flavour. I use it sparingly; you no longer recognise the typical taste of cocoa, but it’s enough to add extra depth to the recipe. It complements the sharp peppers, sweet bell peppers, the rich flavour of the beans, and all the other spices well.
Be sure to try it out for yourself! Add a little cocoa (and at the end, otherwise it will burn) to a Mexican chili or other sauce and let yourself be surprised.
