Vegetable cookies for kids
Children and cookies go well together, but children and vegetables not always! With this recipe, I combine the tasty with the healthy, and my kids love this creation as much as cookies ;-)
For 8 vegetable cookies
Ingredients: ½ courgette 150 grams of carrot julienne 1 spring onion 1 small egg 40 grams of almond flour 40 grams of grated Parmesan cheese or mature cheese 1 teaspoon of lemon zest (optional) 1 tablespoon of finely chopped parsley (optional) Olive oil (optional) Baking paper
Preparation: Preheat the oven to 220 degrees. Wash the half courgette and grate it coarsely. Finely chop the spring onion and beat the egg in a bowl. Then mix all the ingredients (except the oil) together in a mixing bowl until you have a smooth mixture, but firm enough to form mounds. If it’s too wet, add a little more almond flour. Place baking paper on a baking tray. Form 8 mounds of the mixture and place them on the baking paper, pressing the mounds down slightly. Make sure the baking paper doesn’t blow up in the oven by placing a mound on the corners. Optionally brush the cookies with a little olive oil if you want extra colour. Slide the tray into the preheated oven and bake the cookies for 8 to 10 minutes.
Delicious with fresh coleslaw and roasted potatoes.
