Green asparagus with mimosa and crispy toast Brunch/Lunch

30 minutes When you think of mimosa, you tend to think of the drink rather than the egg, but actually, it’s neither. Instead of alcohol, this dish features a “crumble” of egg that is named after the yellow flowers of the Mimosa plant, just like the drink. Personally, I really enjoy crostini with this dish.
Ingredients:
Green asparagus with mimosa
4 eggs
2 bunches of green asparagus
2 teaspoons capers
1 tablespoon extra virgin olive oil
pinch of sea salt
black pepper from the grinder
Crostini
8 thick slices of baguette
1 tablespoon butter
1 clove of garlic
Method: Egg Mimosa
1. Boil the eggs for 8 minutes until hard-boiled. Then cool them in cold water and peel them. Chop the eggs into fine crumbs. Mix the crumbs with the capers, olive oil, sea salt, and black pepper.
2. Cut off the tough bottom part of the stalk (which is often very hard). Boil the green asparagus for 2-3 minutes in lightly salted water with a knob of butter. Then immediately transfer them to a bowl of cold water. This stops the cooking process and keeps the asparagus nice and green.
3. Place the green asparagus on a plate and top with the egg mixture. Serve with the crostini.
Crostini
1. Preheat the oven to 180° Celsius.
2. Melt the butter.
3. Finely chop the clove of garlic and mix it with the melted butter.
4. Spread the garlic butter on the bread and bake the slices in the oven for 5 to 10 minutes until golden brown.
