Make your own grilled Italian polenta
Next week my menu has an Italian twist :-) If you fancy making a different Italian side dish other than pasta or potatoes, then polenta is an original alternative. Gluten-free and kids love it too! Below you will find my recipe.
Grilled Italian polenta
Serves 5
Melt 50 g of butter in a small pan. Add 1 sprig of finely chopped rosemary, let it warm up (do not fry) and turn off the heat.
Bring 600 ml of vegetable stock to the boil in a large pan
Then add 180 g of polenta. For home use, it’s easy to use instant polenta. This is pre-cooked and therefore takes less time to cook.
Stir for a few minutes until smooth.
Turn off the heat.
Stir in 60 g of grated Parmesan cheese and the rosemary butter and mix well.
Pour the mixture onto a greased baking tray.
Bake in a preheated oven at 220 degrees for 5-10 minutes until the polenta is nicely golden brown.
Cut into wedges or triangles and you're done! Delicious with, for example, ratatouille. Enjoy your meal,
