Fresh pea soup
Mint is widely available now and is the flavouring for this deliciously fresh bright green soup. It can be enjoyed both cold and warm, so depending on the weather, you can make your choice!
Ingredients for 4-5 generous bowls: 1 onion 3 cloves of garlic 1 medium potato 500 ml vegetable stock 250 ml cooking cream 650 grams frozen peas A few sprigs of fresh oregano or marjoram or half a teaspoon of dried oregano A bunch of mint 1 lemon 3 tablespoons of yoghurt Vegetable oil Pepper and salt
Preparation: Peel the onion and garlic and chop finely. Sauté the onion and garlic in some oil over a low heat. Allow the onion to soften gently. In the meantime, peel the potato and cut it into cubes. Once the onions are soft, add the potato along with the stock and cooking cream. Place the lid loosely on the pot and let it simmer gently until the potato is soft. Meanwhile, pick the leaves from the oregano or marjoram and remove the mint leaves from the sprigs. When the potato is cooked, let the peas simmer for 1 minute. Then turn off the heat. Add the oregano/marjoram or dried oregano along with the mint leaves and blend the soup until smooth. Stir in the yoghurt and add lemon juice to taste. Season further with pepper and salt.
