Basic couscous recipe
My basic couscous with a tip!
Serves 4
Couscous is tasty, healthy and quick to make. You can eat it as a main dish with grilled chicken or roasted vegetables, but it’s also perfect as a side dish or in a meal salad. In short, you can do all sorts of things with couscous! Below, I share my basic recipe:
Ingredients: 300 grams couscous (see my tip at the bottom for preparation) ½ lemon, zested and juiced 1 cucumber, diced 25-30 grams fresh green herbs, finely chopped Olive oil Pepper and salt
Preparation: You can make couscous delicious with plenty of fresh green herbs like dill, chives or parsley – certainly 6-8 grams per person. Additionally, add the diced cucumber, lemon zest and juice, good olive oil, pepper and salt. Now your base is ready.
You can enrich the basic couscous with ripe tomato wedges, al dente cooked haricots verts, edamame beans or roasted vegetables like aubergine, pumpkin, sweet potato or fennel. You can also make the couscous fuller and more nutritious with different types of roasted nuts such as almonds, hazelnuts or cashews.
Tip! A trick to get couscous nice and fluffy: mix a splash of olive oil into the uncooked couscous. Then pour COLD water over it (for every 100 grams of couscous, use 125 grams of water) and a little salt. Let it sit for half an hour and then fluff it up with your fingers and voila: fluffy couscous without lumps :-) Enjoy your meal!
