Courgette & feta burgers
These burgers made from courgette, feta, basil, and almond flour are deliciously fresh, savoury, and gluten-free. Great in a sandwich or served with dinner alongside seasoned rice and a salad. A refreshing dip made from Greek or full-fat yoghurt with freshly chopped herbs, black pepper, a pinch of salt, and a splash of lemon juice makes these burgers even tastier :)
Ingredients for 12 small burgers (serves 4):
1 large courgette
1 spring onion
15 grams basil
60 grams almond flour
50 grams feta
1 egg
Half a tablespoon of olive oil
1 lemon
Salt
Freshly ground black pepper.
Preparation:
Grate the courgette using a coarse grater and sprinkle with half a teaspoon of salt. Mix together and let it sit in a colander for a while.
Preheat the oven to 220 degrees.
Slice the spring onion into rings and finely chop the basil leaves, then beat the egg in a bowl. Crumble the feta. Squeeze the courgette to remove as much moisture as possible and transfer it to a large bowl. Add the spring onion, basil, feta, almond flour, olive oil, and egg, and squeeze a small tablespoon of lemon juice over it (save the rest of the lemon for your yoghurt dip). Add some black pepper and mix everything until well combined.
Line a baking tray with baking paper and form heaps of about 50 grams each (this recipe makes about 12 burgers). The heaps will flatten slightly in the oven, so leave enough space between them. Bake in the oven for 8 to 10 minutes.
