Brioche
Brioche is a light bread made with flour, butter, and egg. This luxurious bread is often seen on restaurant menus, but you can also make it yourself! Delicious for an elaborate breakfast or brunch or as a starter. Make the dough a day in advance and bake it on the day itself, just make sure to start on time :) Tip: You can also use this dough for your favourite burger. Follow the recipe and make balls of 100 grams, placing them far apart on a baking tray lined with baking paper.
Ingredients for 10 small brioche rolls or 6 hamburger buns:
110 grams of plain flour + 270 grams of plain flour
100 grams of cold unsalted butter
180 ml of milk
12 grams of fresh baker's yeast (available at your local supermarket)
1 level tablespoon of sugar
2 level teaspoons of salt
1 egg, beaten
1 egg, beaten (not for the dough itself)
Black sesame seeds (optional)
Preparation:
Warm the milk with the yeast and sugar in a saucepan until lukewarm and let it sit for 15 minutes.
In the meantime, use a food processor to blend the 110 grams of flour with the butter until fine crumbs form.
Then, by hand, mix these crumbs with the 270 grams of flour and the milk in a large bowl until you have a firm mixture. Add the salt and the egg, and make a firm dough. Place this in a bowl with a lid (it will rise, so ensure it's a spacious bowl) and leave it in the fridge overnight.
The next day, take the dough out of the fridge and let it sit at room temperature for an hour. Then knead it briefly and divide the dough into 10 equal pieces. Shape them into balls and place them close together in a high-sided baking tray lined with baking paper. Leave this tray covered with a damp cloth outside the fridge for about an hour or longer, until the balls have doubled in height. Preheat the oven to 170 degrees. Brush them with a little egg and optionally sprinkle with sesame seeds. Bake the brioche for 20 minutes. Then remove the tray from the oven and let the brioche cool in the tray. Serve the brioche whole or separate the rolls. In the fridge, this brioche covered will keep for 3 days. Reheat in a preheated oven at 180 degrees for 4 minutes, and you'll have fresh brioche again!
