Bonne femme vegetable garnish

Bonne femme - French vegetable garnish

Essentially a recipe to use up leftover vegetables from the fridge and even the freezer in a delicious way. So if you have celery root, cauliflower or other sturdy vegetables left, chop them into cubes and sauté them with the rest of the vegetables!

Ingredients: 250 grams of mushrooms, 1 large onion, 200 grams of diced bacon, 1 kg of peeled potatoes, 250 grams of diced carrots, 400 grams of mixed green vegetables, such as fresh green beans, peas, runner beans, broad beans, leeks. Black pepper from the grinder and salt, 2 sprigs of fresh thyme. Sunflower oil, or butter, if you want to be a true French Bonne Femme ;)

Preparation method: Remove the thyme leaves from the sprigs. Cut the mushrooms into quarters. Sauté the chopped mushrooms together with the thyme leaves over medium heat in some sunflower oil (or butter) until they are golden brown. Use a large frying pan for this. Set aside. Meanwhile, finely chop the onion and fry it together with the diced bacon in a little sunflower oil (or butter) until golden brown in the same pan. Cook the green vegetables and carrots until al dente in plenty of water. Cut the potatoes into cubes and roast them in the oven on a baking tray with some oil and a little salt for 20 minutes at 180 degrees until golden brown. Place the frying pan back on low heat and add all the prepared ingredients, mix together and add black pepper to taste and possibly some salt.

Delicious with a salad, possibly complemented with a piece of meat and gravy.
