White bean salad with herby pistou
This salad is super easy and looks stunning on your plate! Gluten-free, 100% plant-based and full of fibre, it makes an ideal lunch or main course. Pair it with a slice of sourdough bread, sustainable canned fish like sardines or salmon, or a tasty meat substitute from your local supermarket.
Ingredients for 3-4 servings:
450g giant beans or canned white beans, drained weight
400g rich tasty tomatoes or other ripe sweet tomatoes
Half a red onion
Bunch of parsley
Bunch of dill or chervil
Bunch of basil
Half a lemon
2 tablespoons extra virgin olive oil
Black pepper from the grinder
Salt
Preparation:
Rinse the beans under cold water and set aside. Peel the onion and slice it thinly. Cut the tomatoes into wedges. Place all the herbs (with some of the stems) in a blender or bowl for an immersion blender, add the juice of the half lemon, along with a pinch of salt and the olive oil, and blend until you have a reasonably smooth green mixture. If it’s too thick or not blending easily, add a small amount of water. Combine this with the beans, onion, and tomatoes in a nice bowl and mix everything together. Add black pepper, salt, and possibly a bit more oil or lemon juice to taste.
