Beet & feta burger
The sweetness of beets and the saltiness of feta is a perfect combination in this gluten-free veggie burger. Not difficult to make and a great companion to a couscous or quinoa salad. Or between Lebanese flatbread with a dollop of your favourite garlic yoghurt sauce...
Ingredients for 8 burgers:
450 grams of red beet julienne (fine strips)
90 grams of oats
1 small onion
150 grams of feta
2 cloves of garlic
One and a half tablespoons of olive oil
2 eggs
15 grams of chives, dill, or basil, the leaves, finely chopped
Preparation:
Peel and finely chop the onion and garlic. Then mix all the ingredients together and set aside in the fridge for an hour. This allows the oats to absorb all the moisture and become a firm mixture.
Preheat the oven to 180 degrees and then shape the mixture into burgers (don’t be alarmed if the burger feels a bit loose, it will hold together well while baking) and place the burgers directly on baking paper on a baking tray. Bake them for 20 minutes until cooked through.
