Mexican Meal Salad with Avocado Dressing
Enjoy healthy eating with this Mexican-style salad. A mix of beans and black wholegrain rice forms the base. Added to this are crunchy vegetables, roasted corn, and pieces of fresh watermelon, which I season with jalapeño peppers. Sweet and sour red onions and an avocado dressing with fresh coriander complete the salad. This meal is packaged individually and is perfect for dinner (or lunch), easy for on the go, at work, or simply at home. 500 grams, vegetarian, gluten-free, and 100% plant-based (vegan).
