Cheaty butter tofu curry
Inspired by butter chicken, a mild, non-spicy curry and a popular Indian dish. This variant is made with tofu and is just as creamy and full of flavour! We start with a lightly spiced tomato curry, and the coconut milk adds the creamy touch. The fresh tofu is marinated with Indian spices and added at the end. Served with whole grain rice mixed with various finely chopped al dente vegetables. This makes for a vegetable-rich, healthy, and delicious meal, perfect for a day when you want to skip meat. Gluten-free and 100% plant-based. In the photo, white rice is shown, but you will receive whole grain rice packed with vegetables!
Tofu, cauliflower, tomatoes, peas, carrot, green beans, white onion, garlic, fresh ginger, coriander, chilli powder, garam masala (coriander seed, cumin seed, cardamom, allspice, nutmeg, pepper, fennel seed, bay leaf, clove), kasuri methi (dried fenugreek leaves), cumin seed, coriander seed, turmeric, almond flakes, soy yoghurt, basmati rice, brown rice, coconut milk, sugar, pepper and salt, sunflower oil.

Heat the sauce and vegetable rice loosely covered for 3-4 minutes (1 person) to 5-8 minutes (2 or more persons).

Preheat the sauce with vegetable rice covered with an ovenproof plate or aluminium foil for 15-20 minutes (1 person) to 25-30 minutes (2 or more persons). Plastic containers and lids cannot be used in the oven, please transfer to an oven dish.
