Cheaty Butter Tofu Curry

Inspired by butter chicken, this is a mild, non-spicy curry and a popular Indian dish. We make this version with tofu, which is just as creamy and flavourful! We start with a lightly spiced tomato curry, and the coconut milk adds a rich touch. The fresh tofu is marinated with Indian spices and added at the end. Served with whole grain rice mixed with various finely chopped al dente vegetables, this is a vegetable-rich, healthy, and delicious meal, perfect for a day when you want to skip meat. Gluten-free and 100% plant-based. The photo shows white rice, but you will receive whole grain rice packed with vegetables!
