Stuffed Vegetable Lasagne

A delicious dish for children, perfect for picky eaters who aren't fond of vegetables. The finely chopped pieces of carrot and courgette are hidden in the tomato sauce. Topped with a layer of Parmesan cheese, which we briefly gratinate in the oven.
