Mac n Cheese with Pumpkin

This Mac n Cheese contains much more vegetable goodness than you might think at first glance. I make the pasta wonderfully creamy by puréeing sweet roasted pumpkin and steamed leeks, then mixing it with a cheese sauce. Enjoy your meal! The dish is slightly different from the photo.
