Lentil Soup with Potato
I make this soup based on a soffritto of carrot, leek, onion, and garlic. I add lentils and potato, then blend it all into a creamy soup. Flavoured with fresh parsley, a touch of miso, and savoury mature cheese. 500 ml, enough for 2 bowls, gluten-free.
