Japanese Vegetable Soup
This lightly spicy Japanese soup is packed with vegetables such as broccoli, pointed cabbage, and bean sprouts. I use my homemade vegetable stock as a base, which I infuse with flavour by simmering it for a long time with various vegetables, dried shiitake mushrooms, and sake. I add marinated cubes of tofu to it. 500 ml, enough for 2 people.
