Veggie Thai Stir-Fry with Coconut Satay
This is yesterday's meal, just as delicious today and €1 cheaper! Individually packed in sustainable disposable packaging. A Thai vegetable dish full of spice and flavour! I stir-fry the vegetables until just tender and mix them with fried tofu and fresh Thai basil. The steamed rice is briefly fried with Thai spice paste and mixed with roasted cashews, giving this healthy rice plenty of flavour. The light peanut sauce made from coconut milk is mildly spicy and complemented with fresh lime juice. Plant-based (vegan) enjoyment!
